Salmon w/ Asian Style Veggies

Serves: 2-3 | Preparation time: 20 minutes | Cooking Time: 20 minutes | Level: Beginner

 
 

Ingredients

1 lb salmon

2 baby bok choi

1 head of broccoli

Bag of snap peas

Green onions (optional)

Rice of choice (optional)

Oil & seasonings

Cooking Oil (Avocado / Grapeseed)

Salt

Pepper

Soy Sauce

Chili Powder of choice

Teriyaki / Bulgogi / Asian sauce of choice

Honey + Lemon (if making Honey Lemon glaze)

 

Steps

Step 1
Pre-heat oven to 400, then Wash veggies, cut the leaves off the Bok Choi and stems of Broccoli

Step 2
Slightly cut end off Bok Choi, then cut both that and Broccoli length wise

Step 3
Cut ends off Snap Peas and then in half

Step 4
Mix together your salmon rub and add to filets on a baking tray

Step 5
For 1/2 pound salmon filets, cook at 400 for 12-14 minutes, then into the broiler for 2 minutes

Step 6
Bring cooking oil to mid / high heat, then add your Bok Choi and Broccoli
Season and flip once one side is browned, about 3 minutes
Add leaves + snap peas, drizzle a splash of soy sauce, cook for 1 minute

 

Common Pitfalls

Set a timer for 75% of your salmon cook time (8-10 minutes) and check how it is!

Do the same for your vegetables, taste them shortly after flipping to see how much more time they need.

Try your sauce / marinade before applying to the fish!

  • Salmon: any similar sized fish filet

    Vegetables: most vegetables, miso glazed eggplant or okra

  • Make a honey lemon rub by adding one tablespoon of Honey, 2 tablespoons of lemon juice, some salt and chili flakes. Mix until incorporated and apply to salmon
