Mediterranean Couscous Bowl

Serves: 2 | Preparation time: 10 minutes | Cooking Time: 30 minutes | Level: Beginner

 

Steps

Step 1
Bring 1 cup of water per 1 cup couscous to a boil, add in couscous and lower heat for 5 minutes

Step 2
Chop up cucumbers and tomatoes to medium sized chunks, and finely dice onion to garnish

Step 3
Add couscous to your bowl and season with olive oil and spices
Add veggies on top and season again with olive oil and spices

Step 4
Add desired garnishes (feta / olives / onion / protein)

Couscous

1 tomato

1 cucumber

Feta cheese

Red onions (optional)

Kalamata olives (optional)

Protein of choice (optional)

Vinaigrette:

2 tablespoon Olive Oil

1 tablespoon Vinegar of choice (Apple Cider / Red Wine)

1 teaspoon Salt

1 teaspoon Pepper

1 teaspoon Herbes de Provences / Italian Herbs / Za’taar

Oil and Seasonings

Olive Oil

 

Common Pitfalls

Dress your couscous base with Salt / Pepper / Olive oil before adding on your toppings!

 
  • Most veggies here can be swapped out to taste!

    Any protein (leftovers are great) can be added!
