Harissa glazed carrots w/feta cheese

Ingredients
5-6 Carrots
Feta cheese
Hummus / Yogurt of choice (can do both)
Green onions (optional)
Carrot rub
2 tablespoons Olive oil
1 teaspoon Salt
1 teaspoon Pepper
1 teaspoon Paprika / Smoked Paprika
1 teaspoon Herbes de Provences / Italian Herbs / Za’taar
1 teaspoon Honey
Oil & seasonings
Cooking Oil (Avocado / Grapeseed)
Olive Oil
1-2 tablespoons Harissa
Steps
Step 1
Pre-heat oven to 400, then cut ends of carrots off and slice in half length-wise
Step 2
Prepare your harissa rub and mix into carrots
Step 3
Cut ends off Snap Peas and then in half
Step 4
Drain your chickpeas, rinse off, then add onto baking tray with harissa rub
Step 5
Cook carrots at 400 for 15 minutes, then flip them
Step 6
Place chickpeas into oven with carrots and cook both for another 20-25 minutes
Step 7
Add yogurt / hummus to base of your plate, then carrots / chickpeas on top
Garnish with feta, olive oil, and green onions
Common Pitfalls:
Taste your rub as you go! Make sure flavors are right before applying to carrots
Try your carrots around 20 minutes into cook time! Get a good gauge on how much longer they need to cook for your preference

Harissa: can use most kinds of chili / spicy sauces, or mix together olive oil with some lemon, garlic powder, and paprika / smoked paprika
