Bangin’ Cold Sesame noodles

Serves: 2 | Preparation time: 20 minutes | Cooking Time: 10 minutes | Level: Beginner

 

Ingredients

Noodles of choice (Udon / Egg / etc)

1 bag Snap Peas (optional)

1/2 Cucumber (optional)

Green Onions (optional)

Sesame Sauce

5 tablespoons Soy Sauce

1/4 cup Chinese Sesame Paste (Tahini as a substitute)

2 tablespoons Chinese Black Vinegar (Rice Wine Vinegar as a substitute)

1.5 tablespoons sugar (White or Brown both work)

1 tablespoon Chili Oil

1 clove of finely diced Garlic

1 finely diced Chili of choice (Fresno, Jalapeno, etc)

1-2 tablespoons of warm water to get to desired consistency

 

Steps

Step 1
Cut off the ends of your Snap Peas and then in half

Step 2
De-seed your Chilies, then finely dice both them and Garlic

Step 3
Thinly slice your cucumber

Step 4
Assemble your Sesame Sauce

Step 5
Bring water to a boil, then cook your Noodles; once cooked, run through cold water and drain

Step 6
Add some warm water to your Sesame Sauce until desired taste and consistency, then mix into Noodles and garnish!

 

Common Pitfalls:

Taste your sauce as you go! If it’s too strong or thick, add some warm water to dilute

    Can also add protein to make the dish heartier!

    Sesame sauce can be modified based on taste, adding fish sauce, oyster sauce, etc to enhance flavors
