Step 1
Preheat the oven to 400°F.
Step 2
Wash the rice and cook it in a rice cooker.

Cut the bok choy into quarters.
Step 4
Season the salmon.
Step 5
Pour avocado oil into an oven-safe pan and heat to medium-high. Once ready, place the salmon in the pan, skin side up.
Step 6
Sear for 1-2 minutes, then flip the salmon skin side down and transfer the pan to the oven. Bake for 10-12 minutes.
Step 7
Drizzle the bok choy with soy sauce. Heat a pan with avocado oil to medium-high. Once ready, place the bok choy in the pan, flat side down. (NOTE: Avoid stirring too much; only flip the bok choy onto another flat face when the first side is nicely browned).
Step 8
Once a few sides are nicely browned (about 6-7 minutes), remove the bok choy from the pan.
Step 9
Remove the salmon from the oven. Scoop a portion of rice, season it, and plate.
