French Classics: Crepes Suzettes

Serves: 6-8 | Preparation time: 30 minutes | Cooking Time: 15 minutes | Level: Beginner / Intermediate

 

Crepes Ingredients

300 mL Milk

125g Flour

50g Unsalted Butter

20g Granulated Sugar

3 Eggs

1 teaspoon Vanilla Extract

1 tablespoon Orange Blossom Water (optional)

Filling + Other Ingredients

1 Orange

75g Icing Sugar

125g room temperature Unsalted Butter

15cL Grand Marnier

 

Steps

Step 1
Mix together milk, vanilla, and butter on low heat in a pot until the butter has melted; then, mix in sugar, take off heat, and cover

Step 2
Add your flour into a mixing bowl, creating a little well for your eggs; add in your eggs and whisk until evenly incorporated

Step 3
Slowly mix in milk mixture, until there are no lumps and mixture is smooth

Step 4
Add butter to pan on medium heat and pour your crepe mixture in, flipping after 1-2 minutes depending on your pan’s heat

Step 5
Combine sugar, room temp butter, and orange zest until one homogenous mixture, then apply to one quarter of the crepe and fold into quarters

Step 6
Add your folded crepes into a pan with a little butter on low / med heat; simultaneously, bring your Grand Marnier to a simmer

Step 7
Once Grand Marnier is hot, pour into the pan and light your match to flambe, flip crepes halfway through this process

 

Common Pitfalls:

Don’t mix in juice when you flambe, and make sure your Grand Marnier + the pan is hot when you go to light with a match
